Sweet Potato Pasta

Creamy and cheesy pasta using 100% plant-based ingredients is now achievable with this recipe! 

INGREDIENTS
  • Pasta, 1 pack (cooked)
  • Sweet Potato, 1 large
  • Small Potato, 1
  • Cashews, 1/2 cup (soaked)
  • Onion, 1 small
  • Garlic, 2 cloves
  • Oil, 1 tbsp
  • Plant-based Milk, 1/3 cup
  • Nutritional Yeast, 1-2 tbsp
  • Cayenne Pepper (optional)
  • Salt & Pepper (to taste)
METHOD
  1. Peel and chop potatoes and place into saucepan with water and cook until softened. 
  2. Add onion, garlic and a little oil and saute until cooked. Remove from heat and set aside.
  3. Cook pasta as directed.
  4. Add cooked onions, potatoes, cashews, plant based milk and herbs into a blender and blend until smooth. 
  5. Pour sauce into a pot and cook until sauce thickens.
  6. Add cooked pasta into the sauce pot and coat with the sauce. 
  7. Pour into your favourite coconut bowl with fresh kale. Enjoy!
