Spinach & Cashew Pasta

Nutritious and absolutely delicious pasta with just 5 ingredients. @terezas_diary 's Spinach and Cashew Pasta is great for busy evenings. Whip this up and it'll be ready in just 15 minutes.

  • Whole Wheat Linguine
  • Spinach, 150 g
  • Passata, 100 ml
  • Cashew Butter, 20 g
  • Cashews, 20 g
  1. Add the pasta into a pot, pour in hot water and cook it according to the package instruction - for about 7 minutes in a hot water.
  2. Sauté the spinach. In a mug combine the cashew butter with a passata (+ little bit of water if needed) and pour that sauce over the spinach.
  3. Stir in cooked pasta, mix it all together and let it cook for few more minutes. Then transfer the meal into a coconut bowl, sprinkle it with some cashews and serve!
