Lara Zaugg- Vanilla Crunnch

Lara is a passionate food and lifestyle blogger from Switzerland. She is also a cat and art lover. Lara loves to experiment in the kitchen creating new desserts, sometimes baked and sometimes raw. Her blog takes you inside the magical world of vegan desserts! We chatted to Lara about the new cafe she is opening, food blogging and being apart of our cookbook!

Tell us about yourself! (Where you are from, what you do, what you are passionate about)

My name is Lara and I grew up and live in beautiful tiny Switzerland :) I love to be abroad and travel the world but somehow the roots always brought me back to my hometown. I am a freelance blogger aka design student aka bootcamper aka chocoholic and nature lover. I think my passion definitely lies into the sweet baking corner. To be honest I really suck at picturing savory stuff in a nice way.

Tell us all about the cafe you are opening?

I always dreamed about having my own cafe and I thought a Pop Up Cafe in summer would be the perfect opportunity. Summerfling will be a place where I can sell my sweet creations and surprise the people with colorful smoothie bowls. There is no place like that currently in Switzerland. Every smoothie bowl will be served in a Coconut bowl, so people hopefully immediately get into the summer mood.

What is the plant-based/ vegan culture like in Switzerland?

I think looking back in history or maybe still today, when you think about Switzerland you think about cheese and chocolate. We have a lot of heavy traditional dishes such as Fondue and Raclette but there are certainly alternatives. More and more plant-based options are available at restaurants and also in super markets, you are now able to buy plant based milk such as almond, soy or rice milk. I think it is more than a trend and I really like the fact that people start to think about what they are putting in their bodies. This is not just about veganism it is just about the fact that what goes inside our body determines how we feel during the day.

When did you start food blogging on Instagram and what inspired you to start?

I started 7 years ago on a personal account. It was never my intention to do this professionally, I just wanted to share recipes with my friends. Somehow my account grew and I guess people liked what I did or still do. Oh...and a boring business administration Bachelor helped as well to kick things of as I was looking for a creative hobby next to studying. Now my hobby is my job. Life is crazy in unexpected ways sometimes.

Your vegan desserts are out of this world amazing. Where did you learn your skills from?

I guess there is a lot of experimenting and failing behind :D Also I get inspired by a lot of amazing accounts on Instagram. I have a passion for anything sweet so I practice daily ;)

Your photos are always styled so nicely, what tips and tricks can you share to assist in creating such great images?

I think it is really about thinking outside the box. Most of the time the craziest angles give me the best pictures. Also I recommend having a lot of props on hand. No expensive jars or whatever; I buy all my stuff second hand. One thing I learned that you don’t need an expensive camera, expensive props or a professional photo studio in order to have good pictures. I take all my pictures in my kitchen. The kitchen is super tiny!

What’s your go-to breakfast?

A big tupperware of overnight oats, topped with fresh seasonal fruits and a dollop of almond butter or chocolate spread :P

You serve up some pretty amazing dishes in our Coconut Bowls! What has been your favorite so far?

I guess it was and will always be the classical Cacao Banana Nicecream!

We are so excited to have one of your recipes included in our cookbook ‘Vegan Bowls for Vegan Souls’. Tell us about the recipe you chose?

I chose to make my Twix Bars as I just can’t get enough of sweets! The caramel chocolate combo is a favorite of mine and the best snack to get me through at university.
